    Traditional Scottish macaroon bars

    The recipe for commercial macaroon bars has changed, as this recipe can't be stored for more than a few days - but I remember when my mum made it, they barely got the chance to cool before we scoffed the lot!

    Scottish Macaroon Bars
    (makes 12)
    Ingredients

    Cold and thoroughly mashed boiled potatoes - 1½ heaped tablespoons of mashed potato per bar
    Icing sugar (have a packet ready – quantity depends on how stiff your mashed potato is)
    2 tsp vanilla essence
    8 oz Melted chocolate for coating
    1 Cup Toasted desiccated coconut

    Method
    Cook potatoes in boiling water for 20 minutes before mashing.
    Toast desiccated coconut on tray at 350°F (180°C/Gas Mark 4) until golden brown.
    Melt chocolate slowly in a warm pan; stirring constantly to prevent sticking.
    Mix potatoes with icing sugar; add enough sugar to make the mixture firm.
    Chill, then roll out to ¾ inch thick and cut into bars.

    Coat the bars with melted chocolate (I used a pastry brush!) and cover with the toasted desiccated coconut on all sides.

    Allow the bars to cool before eating (and enjoying!!!) Scottish Macaroon Bars.

    Ha ha!! settle petal was not wanting a whole legal shenanigans, just an agreement that you provide me with all the baked goods from your scrummy recipies!! like I was a member of yer family!! A soon to be very very fat member of yer family!! ;o)

    Also I love the shop bought stuff, but if I could make my own!!?? wooo heee!! I'd set up a wee production unit in my kitchen! :oD

    I made it using smash powdered potato! 1 scoop (icecream scoop) to a pack of icing sugar, it is heavy going mixing it but it is a nice fondant iin the end!

    You can leave out the vanilla, its ok as it is! if you like you could add peppermint for a minty macaroon!!
