Apple And Cream Cheese Squares

INGREDIENTS
For the base:
1/2 cup butter, softened
1/3 cup granulated sugar
1 cup All-purpose flour
1/3 cup raspberry or bramble jam
For the filling:
1 8oz/250g package Cream Cheese, softened
1/4 cup granulated sugar
1 egg
1 tsp. vanilla
For the topping:
3 cups peeled and thinly slice apples
Half-cup sultanas or stoned dates left overnight soaking in sherry
1/3 cup granulated sugar
1/2 tsp. cinnamon
1/2 cup sliced almonds
METHOD
Prepare the base by creaming together the butter and sugar until thoroughly mixed. Blend in flour. Press evenly onto the bottom and 1-1/2 inches up the side of a pan with removable rim. Spread the jam evenly over bottom part of 'pastry'.
For the filling, beat all filling ingredients together with an electric mixer until smooth and light. Spread over jam evenly.
For the topping, toss apples, sultanas or dates, sugar and cinnamon together to coat well. Spoon over filling. Sprinkle with almonds.
Bake at 450° F. for 10 minutes then reduce heat to 400° F. and bake for 25-30 minutes or until set and apples are tender. Cool slightly then remove pan rim.
Slice into squares (if rectangular flan-pan) or flan slices if circular.

Got it in one! You might notice - lots of my recipes include some form of alcohol!
In the recipe or down the spout. I like the recipes that call for 2 tbs of wine. 2 tablespoons for the pot and one bottle for me. The food is always delicious...or so they tell me.
